“Sweet Heat” Chicken Quesadillas

Ingredients

• 4 large flour tortillas
• ½ cup canned refried beans
• ½ cup “Sweet Heat” Strawberry Salsa
• ½–¾ lb cooked chicken, chopped
• 4 green onions, chopped
• 1 cup cheddar cheese, shredded
• ½ cup sour cream
• 2 cups lettuce, shredded
• 2 tomatoes, seeded and diced

Instructions

1. Preheat broiler.
2. Arrange tortillas on a cookie sheet. Spread beans over tortillas.
3. Add “Sweet Heat” Strawberry Salsa, then layer with chicken, onions, and cheese.
4. Place under broiler for 1–2 minutes until cheese melts.
5. Serve topped with sour cream, shredded lettuce, diced tomatoes, and additional “Sweet Heat” Strawberry Salsa.
